Clairin is Haiti’s local un-aged clear spirit that is produced by hundreds of micro distilleries, each with their own respective terroir. Le Rocher is a distillery at a higher elevation, creating their Clairin in the style of Jamaican single pot still by boiling wild sugar cane juice into syrup. The use of 30% dunder (Rum "Sour Mash") helps manifest wild, brazen aromas and flavors. Scents of coconut husks, overripe bananas, petrol, sea salt and cinnamon abound.
