Empirical Spirits Ayuuk Blend

Made from Pasilla Mixe chiles that are grown at altitudes of 2,700 meters by the indigenous Mixe people of Oaxaca. The special chiles are partially dried before harvest and then smoke dried with local hardwood afterwards. Describing the production process at the distillery - "For Ayuuk, the chilis are macerated in low wine, distilled, blended with spent Pasilla Mixe kombucha, and finished in Oloroso casks for five days. The base of Purple wheat and Pilsner malt rounds out the chili’s natural earth tones and pleasant spice." Available in limited release.
