Father Loris and sons Raffaele and Adelchi Follador farm about 7 hectares in the twisting, steep valley. They work quietly & quite independently of any consumer or commercial expectations. Their vines—mainly of Glera, plus a little of other co-planted local varieties—tend to be around 70 to 80 years old.

Col fondo is Valdobbiadene’s technique of reintroducing juice and must into the bottle to promote a 2nd fermentation (think Prosecco Pet-Nat). It’s so much cooler than the bulk charmat second fermentation that most prosecco producers use. It’s the technique that Loris Follador and his sons use to make their DOCG Prosecco. The Follador estate has been farming organically for several generations. There is a thin layer of soil that covers bedrock of solid limestone. The vines are 60-100 year old and have grown roots that have dug deep into the rock. This wine immediately shows a cloudy appearance and a golden hue. It shows delicate aromas of white flowers and fresh hay. Flavors of almond cake, lime, and a hint of vanilla will play on your palate. It’s a wine about subtlety and elegance. Serve with your favorite crudo.

Prosecco

Until recently, "Prosecco" could refer either to a wine or to a white grape. In 2009, however, the grape was renamed "Glera" in a bid to protect Prosecco's good name. Prosecco is usually a sparkling wine made by the Charmat method, though still versions do exist. Because it is so easy to drink, with or without food, Prosecco is a hugely popular choice for parties.
