This "Sous Bois" cuvée is made from the trio of Pinot Noir, Meunier and Chardonnay. The base wine was fermented in various sizes of older oak barrels. After spending an average of 7 years on the lees, the Champagne was disgorged then aged another 9 months in bottle before release.

This champagne from Billecart-Salmon is a product of triumphant dedication to expert use of chemistry and aging. A blend of Chardonnay fermented in old oak, Pinot Noir, and Meunier. Aged on the lees for a whopping 7 years, then disgorged and aged even longer another 9 months before bottling. This is an example where the slight berry profile becomes more nuanced and less juicy and ripe as it encounters the aged wood, There's a noticeable shift in what may be expected. It is slightly more dry and shows florality in its miniscule bubbles, mimicking a sheer foam. This champagne is designed for those lusting after discovery and have already had their fair share of Billecart's classic Brut Réserve, (As one should). Close your eyes and dance along its wood grain. A great backpacking surprise for your next pique-nique en forêt.
