I tried this Chablis over the weekend with Raclette and was blown away by the concentrated aromas and flavors upon my first sip. The Chardonnay grapes for this wine are sourced from the Fourchaume premier cru vineyard, located just north of the town of Chablis. You can expect wet-stone minerality on the palate that is synonymous with Chablis, but it also manages to dial up riper fruit flavors of peach, nectarine, and a little bit of apricot as well. The De Oliveira family founded their winery in 1955 and is currently farming 55 hectares of vines spread over the different vineyard plots in Chablis. Moreover, the family only uses stainless steel for fermentation and aging, so no oak influence is present in this wine. If you’re looking for a richer style of Chablis at a remarkably competitive price point, then I would recommend this one!
