Timorasso is a white grape variety native to Piedmont. This comes from several sites around Monleale from vines planted in chalk and clay soils. Fermented and aged in a combination of ceramic, tank and large old oak casks. Fresh on the palate as this did not go through malolactic fermentation. Pair with quiche.
