Made from Java pure cane juice from Santa Maria Tlalixtac, Oaxaca, this was fermented with ambient yeast in pine tanks. Distilled on a pot still, this aged for 3 years in new French oak barrels in a dry aging room. Aromas of raspberry cheesecake, molasses, wheat bran, oak, and earth.
