From the estate's Les Torres parcel at the very top of the Penedès, comes the freshest Garnatxa. Medium-bodied, with black and red fruit, this aged briefly in both new and used oak barrels to preserve the aromas. Pair with escudella.

Staff Pick Notes

The Parés Baltà winery was founded in 1790 in Pacs del Penedès and has been owned by the Cusiné family since 1978. The grandsons of the patriarch, Joan and Josep, married Maria Elena and Marta, chemical engineer and pharmacist respectively, who were in the midst of their first harvest when they decided to pursue oenology studies to better relate to the family business. In a fairytale ending, they both fell in love with viticulture and became the head winemakers. The beautiful irony is that Parés Baltà is completely organic and biodynamic, meaning the sisters-in-law had to unlearn much of their scientific training, forgoing the use of chemicals. Their Indigena is 100% native Garnacha from the Penedès. Full of juicy wild berries, dark florals, spice, and herbal undertones, this was a perfect partner with Israeli-style falafel.
