The Wide World of Saké

Here at Astor Wines & Spirits, we’re known as “Saké Central,” and for good reason; you can find well over 100 saké selections here, all pristinely stored in our chillers. Saké is highly diverse and comes in styles ranging from dry to off-dry to sparkling to unfiltered (and, therefore, cloudy). Essentially, saké becomes more refined with more polishing; the outer shell of the rice grain, when polished away, yields an increasingly sophisticated final product. Highly polished, elegant, and lithe sakés are known as Daiginjos, though we find that the most basic Junmai category-saké’s entry-level-exhibits complex, earthy, and accessible characteristics that marry well with stews, risottos, mushroom pizza, and even burgers. Since summer is on its way out, get the last of the seasonal, summer release unpasteurized (nama) sakés right now and get ready for the equally impressive fall releases, which are right around the corner. A particular favorite of ours is the Otokoyama “Namacho” Junmai Nama from the northernmost island of Hokkaido. Seasonal namas are limited-release, so enjoy this sake and others like it while supplies last.

Dassai 50 Saké, Junmai Daiginjo Nigori -

When you hear a beverage described as "lightly cloudy," it's not often a good thing - except if the beverage in question is unfiltered (a.k.a. nigori) saké. This one is rich, milky, and full of green apples and mixed melons on the palate. Kosher too.

Tedorigawa's junmai daiginjo combines elements of fruit and earthiness that is reflected in the aromas of pear and papaya, and flavors of mild cream, game, yeast, and citrus. The Yamahai method is evident in this saké, with its distinctively long and dry finish. Serve chilled.
