When I first tasted this Champagne in Andy Fisher’s French Wine course at Astor Center, I thought, hmm, this is lovely, so elegant, racy, a bit of chalky undertone lingering on a palate of pure strawberry and lemon zest, plenty of acidity making it an ideal partner for salty shellfish, but light enough to enjoy on its own, and it’s made from Biodynamically farmed Pinot Noir by a grower-producer to boot! Not bad. Hours later, I discovered the retail price and nearly fell over. This should be everyone’s go-to blanc de noirs. Make it yours.
