Mezcal is a tricky buy for the consumer. Why are the prices ranging from $40 to well over $200? What is the difference? Most importantly, which one am I going to like the best? Start out with (or if you are a seasoned mezcal drinker, take a look at) Alipús. The project started in 1999, and since its founding has curated a tight range of mezcals from unique villages. San Luis del Rio one village beloved by bartenders who find these distillates well-suited for cocktails. However, it's a misnomer to presume mezcal is all about a single smoky flavor. With each batch, bottle and pour, mezcal is a spirit evolving wildly in its aromas and flavors. Durian, cream, butter cream frosting, overripe tropical fruit all burst on the nose. On the palate, salinity, chili pepper, and cashew fruit come to play. Sip it slowly neat, or mix it up.
