Faubert Casimir is the second generation running the family distillery based in the village of Barraderes. This single cane bottling was made from organically grown Hawaii sugar cane variety, fermented with wild yeasts and distilled in a pot still to proof. Showcasing vivid complexity, the rum projects pure notes of tropical flowers, ripe fruits, dried nuts and delicate spices including notes of lime leaf, dragon fruit, lychee, almonds and cinnamon. An incredible rum.

Beautiful things inspire beautiful words. But sometimes beautiful things evoke only feelings, unutterable, cathartic and ancient, and our words fail us. Smelling Clairin, drinking Clairin, I am thus reduced to base caveman grunts and vain gesticulations, longing for a memory that is not my own, for a life I never lived. What does it taste like?? Fair question. The image in my mind is of eating Bananas Foster in a field of freshly-scythed Timothy grass. Maybe the sun is setting. Maybe it’s rising. Either way, the port wine cheese-colored light ignites the dewy grass, the breeze is intermittent and I definitely hear cicadas.
