Oenology school in Beaune revealed to the De Moors how not to make wine. Minimal manipulation, severe pruning to reduce yields, and aging in old oak rather than stainless steel results in a Sauvignon Blanc that defies the norm, with creamy richness and lush, pulpy fruit. The wine’s name, translated as “without noise”, is a tongue-and-cheek nod to the Sauvignon de St. Bris AOC in which the vines lie. The De Moors used to bottle it as an appellation wine but now just go with VDF, as an occasional touch of RS used to give them AOC headaches.
