Grown by farmer Richard Raftice on his farm in Kilkenny, Ireland, this single origin barley is distilled and aged for a minimum of 3yrs in a combination of 31% first-fill US oak, 19% virgin US oak, 25% premium French oak and 25% Vin Doux Naturel prior to being bottled with zero additives or artificial ingredients at 100 proof.

Terroir (téireoir in Gaelic) does not play the same role in spirits production like it does when it comes to wine. But ask the Waterford distillery founder Mark Reynier and you'll get quite a different answer. His goal is to produce single malt whiskey made in Ireland that showcases the unique flavor profiles and provenance of the extraordinary barley of the emerald isle. The grain for this whiskey originates from a single farm—a way to demonstrate the importance of the variety grown & the land from which it comes. Butterscotch, citrus, hay, vanilla. The list goes on in part because the finish lingers forever. This whiskey may be young, but it's certainly worth contemplating. I can't wait to see what else they make!
