Dard et Ribo possess a cult following as they have pioneered natural winemaking in the Northern Rhône since 1983. They are amongst the first organic growers in the Northern Rhône. They also were world pioneers in abandoning sulfur. Most notable is their approach to wine. While winemakers in the region were making high structure bombs for the cellar, Dard and Ribo made wines to drink today. The “Printemps” is released the Spring after harvest (how’s that for fresh?). In the glass, the wine is crammed with aromas, violets, herbs, and cloves. It is dense with light grainy tannins. Flavors of juicy plums, smoke, and minerals all play with your palate. Have this with your next pulled pork sandwich.
