The super rare, indigenous grape, Parpato, is unknown to almost everyone yet sure to impress at any dinner party. This mysterious wine is a gorgeous opaque ruby-purple in the glass. The wine undergoes semi-carbonic maceration to enhance the olfactory profile, presenting wide and bright aromas of wild strawberries, black cherries, and pink grapefruit, complemented by hints of nutmeg, cinnamon, and baking spices. When you take your first sip, the tannins impart a surprisingly prickly sensation (you may almost mistake it for effervescence), but the tannins turn velvety as you continue to sip. Plus, like most Mediterranean wines, it finishes with a fresh salinity. A unique and spectacular wine that can be enjoyed by itself or with a wide array of dishes.
