When I was young, we tended an herb garden out back. My memories are memories of scents: tomato leaves, crushed rosemary, wild mint, and, most of all, lemon verbena. Outside I'd bruise the leaves and coat my hands, then we'd dry the leaves on racks and make tea; my first real intro to digestivo. Growing up I found my love of taste and scent take me to wine, especially natural wine, and among those the wines of Vincent Marie at No Control stand out. The bottle at hand: a zero additive marc of Vincent's Gamay and Chardonnay, with only the hearts bottled, and a 2 day maceration of lemon verbena, spearmint and peppermint. It's a wild thing: a touch of earth to the dried fruit, dry grass, and herbs on the nose. The palate is where it comes alive: incredible freshness, pine and pine sap, and that beautiful, unique verbena citrus coming through.
