Cuvée Shinden, Grape Republic - 2019

Winemaking in Japan began after the Meiji Restoration, but production is still on a small scale. Grape Republic was founded in 2017, and specializes in wines made in amphora. This dry white is 100% Delaware, with whole cluster fermentation, spending 7 months in amphora on the skins. Pair this aromatic and dry lightly structured white with Cornell chicken.
