Crémant du Jura Extra Brut, "BBF", Tissot - NV

A sparkling dry white made entirely from Chardonnay, the BBF stands for Blanc de Blancs aged in oak barrels. Based on two different vintages, the wine was fermented in barrel, bottled with no dosage, and spent 52 months on the lees before disgorgement. Pair this spiced sparkling white with scallops in butter and sumac.
