Ciderman, Cyril Zangs - NV

This is the bottle of cider that I've been patiently biding my time to try and was the wait worth it? Yes, yes it was. Formerly a sales rep for books, Cyril Zangs made the decision to return to his native home of Normandy with his family and pursue artisanal cider production. Picking fruit directly from the tree, Zangs allows the apples to rest in oak for 1-2 months before crushing and pressing off. Wild fermentation takes place in stainless steel and Zangs ages his ciders on the lees for a year, which is not typical in cider production. Texturally rich and creamy, it displays notes of star anise, orange peel, bittersweet apple, and autumn leaves. Zangs' ciders are very much drinking well upon release, but reward those who are willing to sit on them. But nothing wrong with cracking open a cold one, especially when one this good.
