This blanc de blancs is entirely Chardonnay from Les Genettes, a plot in Ambonnay with relatively deep soils and southeastern exposure. The vines are around 40 years-old, and this vinous, full-bodied white Champagne is aged in small oak barrels without malolactic fermentation. With aromas of citrus, white flowers, green apple, and warm spices, this Champagne will be perfect at tableside paired with Cotriade fish stew.
