One of the most thoughtful new whisky distilleries to surface in Scotland in the past decade. The sole distiller on this sparsely populated island of just over 150 souls, Raasay leverages their isolation to make thoughtful whisky that pays attention to every single small detail. Using Scottish barley and Highland peat, the new make spirit is aged in a closely montiored combination of Chinkapin Oak, used Oak, ex Rye and used Bordeaux and Red Wine Casks. Brought to proof using local well water that is naturally filtered the islands ancient volcanic rock and Jurassic sandstone. The whisky takes a few minutes to open but then really shows up to impressively well rounded malt with coastal character, sea breeze, coconut, preserved citrus, salted butter, green peppercorns and toasted oak.

Scotland

History:Distillation was brought to Scotland from Ireland by missionary monks in the 6th century. In 1644, the first taxes were imposed on Scottish distillers by England, with the result that most of the nation’s whisky was soon distilled illicitly. With the Parliament’s passing of the “Excise Act” in 1824, licensing fees for distilleries were much cheaper.
