Païen is the Swiss name for Savagnin, and unlike its neighbors in Jura, this is not vinified oxidatively. This dry white exhibits aromas of quince, peach, bitter almond, and herbs. Romain Papilloud is the third generation of his family to carefully tend vines here in the Valais. Pair with tomato fondue with potatoes.
