From the monopole of Clos du Crosex Grillé in the grand cru of Aigle, this legendary vineyard came into possession of winemaker Phillipe Gex in 2002. His Cuvée des Immortels sees lees aging for one year in stainless steel and amphora. An intense, complex, saline, terroir-driven white that is absolutely a wine to cellar. Pair with Papet Vaudois.

Chasselas

A white grape grown all over the world, including Alsace, the Loire, Germany, Austria, Hungary, and Italy. The best Chasselas wines, however, are produced in Switzerland, where the grape is called Fendant and is the most widely planted variety in the country. When made well, Chasselas is soft, welcoming and easy to drink.
