Tavel wine has been with us for a few centuries. It is one of just a couple of appellations that only produces rosé wine. Alexandre Hote started making wine under his label only since 2019. Pretty cool that he's made it to Astor in that short a time. No wonder, his Tavel is such an original wine that challenges the very definition of Tavel and rosé in general. In the glass you see a deep garnet, purple color that can be confused with a light red. He presses whole bunches, gives the juice a period of carbonic maceration, and does not add any sulfur. Very uncommon practices for rosé. It smells of crushed cherries, herbs, and violets. Velour-like tannins and a crisp minerality play on the palate. Somewhere in there a note of crème brûlée will show. It's a natural wine that’s full of life and breath. Don't expect summer water rosé plonk.
