A dry skin contact white made entirely from Viognier in this vintage. Whole cluster fermentation was 25%, and the semi-carbonic fermentation and time on the skins lasted 3 weeks. A further 6 months was spent in neutral oak. Pair this aromatic and orchard-fruited white with roast pork and mostarda.

I’m always thrilled when a new Florèz wine appears at Astor, they never disappoint and this one is superb. After studying Oenology at UC Davis and working in wineries around the world, James Jelks returned to Santa Cruz to make expressive wines with old world sensibility. He sources his grapes from sustainable vineyards around the Santa Cruz area, and dry farms the rest. Kind of Orange is made from Viognier sourced inland in the Cienega Valley. A gorgeous electric apricot color in the glass, aromas of peach gummy, mandarin and lychee dance from the glass. A chewy palate with notes of pink lemonade, balsamic pear, sweet and sour sauce, cold apple pie and a touch of brine lead to us to a dry yet very refreshing finish. This wine sees three weeks of carbonic maceration, using C02 from another fermentation instead of from a tank, how cool!

Flor

Flor is a protective layer of naturally occurring yeast that grows, under certain circumstances, in the barrels after fortification. Its presence (or absence) is what determines the style of a given Sherry. When it does grow, it protects the wine from oxidation while feasting on the available glycerin - the resultant Sherries are thus dry and very pale in color (called Finos or Manzanillas). Viognier

Some of the most intriguing wines associated with the white Viognier grape contain hardly any Viognier at all: in the Côte Rôtie appellation, wine must be made principally from the red Syrah grape, but up to 20 percent (often far less) can be of white Viognier.
