Joseph Dorbon’s setup is simple: three hectares of organically tended vines on south-facing slopes above his home village of Vadans, just 45 minutes East of Dijon.Dorbon commenced his work as winemaker in 1996 with a horse to help him plow, and a subterranean, 16th-century cellar to slowly mature his magical wines.Dorbon produces only about 2,000 bottles of Trousseau annually, from a single small parcel. All grapes are hand harvested, fermented and aged in stainless steel to maintain freshness and then typically bottled after 9 months. The result is a beautiful, yet pale red wine with a slight orange hue. Trousseau is an open and deliciously fresh variety, with tart red fruit, underlying notes of dried herbs and a light, tannic backbone.
