It would be impossible to overstate the influence of the raw ingredients used to create this very rare rum. Using only local heirloom Java cane, the stalks were hand harvested at altitudes ranging from 2,500-3,800 meters above sea level in 2021. Distilled on a Krassel Still and single time with wild yeasts, there is even more natural cane character retained in the rum after it has aged for 2yrs in Ex-Bourbon in the distillery's humid cellars. The aromatics are bursting with juicy notes of candied watermelon, dried wild strawberries, cardamom, banana pudding and spicy cloves. Wow.
