Made from local Dallam County Texas #1 Panhandle White Corn Balmorhea was aged for 4yrs in new charred American White Oak and then decanted into new barrels again for an additional 5th of aging. It may not sound like much of a process but the brothers have produced one of the most impressive whiskies from we have tasted in quite some time. While the profile is oak driven is dense, their is an oily-ness and juicy element that keeps things very fresh and inviting allowing the whisky to flirt on the edge without falling flat. The flavors are beautiful and well defined with maple syrup, dark honey, pecan pie, sarsparilla, allspice, dates, smores, tanned leather and a pepper and spice dry finish. Outstanding stuff.
