Naturale Orange Vermouth

A collaboration between Giusto Occhipinti of the winery COS in Acate, Sicily and Simone Sabaini, founder of the artisanal chocolate producer, Sabadi. Orange is made with a base of organic orange wine made from moscato grapes. Natural herbs and spices are added to this base that serve mainly to heighten the profile of the wine itself. Phenomenal on its own with a chill and some olives and salty snacks.

In the 40 + years since Giusto Occhipinti cofounded COS winery, he's gone from being a pioneer in natural winemaking to one of the most esteemed producers in all of Sicily. His latest project is Naturale Vermouths, a collaboration with his close friend and chocolate maker, Simone Sabaini, which was inspired by their mutual love of Sicily. This is their orange vermouth, made with organically grown Zibibo (Muscat) grapes which were fermented on the skins, hence, an orange wine. The exact recipe remains a secret, but you'll find notes of orange creamsicle, baking spices and wild herbs. Sweetness predominates upfront then yields to more bitter notes on the finish. Great for cocktails or on ice with a splash of sparkling soda water.
