Not as famous as Tuscany or Piedmont, Latium also has a long history of winemaking, after all Rome was founded in this region. Two elements make the Latium (Lazio) region of Italy a good fit for wine growing. The first is the fertile, volcanic soil. The second is the Tyrrhenian sea to the west providing a cool sea breeze that dries the vineyard and helps prevent mold and mildew. The Elephas Bianco is your everyday white wine. Easy to drink with notes of white flowers and apple, good minerality, good acidity and great freshness.
