Made by brothers Iker & Asier Ulibarri who consider themselves shepherds as they indeed shepherd sheep alongside the many duties of viticulture and winemaking. This Txakoli is anything but typical and should be considered a seriousTxakoli as it's not spritzy but rather vinous and full of character that is more in the direction of a Beaune Blanc given the mineral character. Dry, delicious and made from the local white grapes. A fine Basque wine from the Bizcaia area of northern Spain. Recently released as the elevage far exceeds the typical cycle for the region and therefore this is a Txakoli that can hold for years in bottle.

From Bizkaia province in Basque Country, this lovely Txakoli (CHA-co-lee) is deliciously dry, with just the right amount of acidity. Txakoli means “wine made from a village”, and you can taste the hands-on work of winemaking brothers Isker and Asier Ulibarri, whose family has made wine and cheese since the 1700s. Besides crafting fantastic vino, these Basque brothers also herd sheep, shepherding refreshing citrus flavors and crisp minerality into a bottle of certified organic goodness. Cooler than most regions of Spain, Bizkaian wines gain character from the province’s lower temperatures and higher rainfall, an expression of terroir reminiscent of a dry Rhine Riesling. Unlike some Txakolis, there’s no effervescence, and its lower level of alcohol means you can enjoy this wine all day on its own or with your favorite pinxtos and tapas.
