Todd Hardie's 40 years of of bee-keeping experience brings a deep respect of nature to his most recent venture into the world of spirits. His approach is unique in that only two ingredients are used; juniper during distillation and his raw northern honey at time of bottling. Wonderful texture and sweet floral notes make this gin a real stand-out!
Most Gins have a laundry list of ingredients, botanicals, fruits and vegetables and so forth. Barr Hill Gin has just three simple ingredients: Grain for the spirit, Juniper for the Gin, and a touch of Honey for sweetness. It does not need anything else. Round and soft, yet assertive and complex, Barr Hill is not a dry gin, but rather more in the style of an Old Tom Gin. Though not barrel aged like many Old Tom Gins these days, this could definitely be used in place of Old Tom in a cocktail recipe. The resinous quality of the juniper melds perfectly with the floral nature of the Vermont honey to make a wonderful tasting experience. I really like it slightly chilled or with one ice cube. My favorite cocktails that mixes Barr Hill with fancy (and a little spicy) ginger beer and a twist of lime. Yum!
