With its own cult following, this Mexican Fernet dates back over a century after it was developed by Henri Vallet in his adopted home in Mexico. The classic, clean menthol notes open up the airwaves, exposing further notes of spearmint, molasses, and bitter flowers. Surprisingly soft and not aggressive at all on the palate. Perfect as a digestif or for mixing in cocktails.
Fernet is a category of amaro known for its minty quality and low level of sugar, an ideal bitters to enjoy after a meal. Although there is one very famous fernet out there, it is certainly not the only one worth drinking. I enjoy the Fernet-Vallet for its rich, syrupy texture. Compared to others, the Vallet is opaque with a deep molasses color and dark, roasty flavors. The sweetness is barely there, just accentuating warm spice notes of cinnamon and clove, and is ultimately balanced by moderate bitterness coming from gentian. The cooling presence of cardamom on the lengthy finish distinguishes this bottle among the selection of fernets. Enjoy neat at full intensity, or mellow it out with some cola and ice.
