Espadin is by far the mostly widely utilized species of agave for mezcal production. The plant is relatively easy to cultivate across Mexico, especially within the eight states of Oaxaca, the traditional heart of mezcal country. This edition was produced from plants matured a minimum of ten years prior to harvest in the rare capon style that concentrates the intense agave sugars in each plant. Notes include a gentle helping of smoke, with a ripe underbelly of tropical fruits, minerals, bedrock, agave nectar, and piney florals. This is a very rare offering from the 2006 harvest by Master Mezcalero Rafael Méndez Cruz is from a new palenque to the Jolgorio line and likely to be one of the best things you drink all year.

What is it about mezcal? Cue Nina Simone singing "I got it bad and that ain't good." When you fall, you fall hard. All those wild agaves that take years to ripen, different batches, harvest years, villages and mezcaleros to obsess over. No bottle is ever the same, and you always want more. This bottle holds more intrigue than most: the espadin is wild, and cultivated as a capon, where the flowering stalk of the pina is cut, so all those sugars meant for a 20 foot quiote, are instead concentrated in the pina. After fermentation it spent 10 years in glass demijohns, harmonizing all the flavors. The end result is an intense yet smooth sip, full of green herbs, pine, lime, and honied woodsmoke.We chased this with mango and pear slices sprinkled with smoked salt, the flavors echoing each other, taking the experience to a whole other level.
