Another excellent historical recreation of a classic 19th Century spirit that is called for in tiki, contemporary and classic cocktails as well as in the kitchen for your culinary needs. Only fully ripe bananas are used for the small batch distillation that is then infused with mature bananas to give the spirit its deep amber hue. The spirit is completely natural with zero extracts, flavorings, or artificial coloring. While the nose balances fruit and baking spice aromas, the palate is dense with rich flavors of dried figs, banana bread, coconut cream, cocoa powder, black raisins and raw vanilla.

Rich layers of baking spices, toffee, and vanilla on top of caramelized banana make this a dream in a rum-based cocktail.The home run for me though, has been adding it to food. It is a made in heaven companion to banana bread (splash a little of this and a little bourbon in the batter!). I also added it to French Toast mix along with vanilla extract and a bit of orange zest and it was next level.
