If it was not for Barbados or a man named John Gay, we could all still be drinking a harsh distillate known as Kill-Devil. Residents of the island were already distilling molasses into a rough spirit, but Gay's acquisition of a distillery in St. Lucy Parish changed all of that. Throw in some international sea trade and TA DA! That's the short story of how the world got aged rum. Mount Gay Eclipse is a blend of rums aged 2-7 years, and has been produced by the distillery since 1910. Its fruit and vanilla components match well with all manner of cocktails and can also be used for baking. The next time you need a dark rum for a sour or punch, reach for Mount Gay Eclipse and drink a little bit of history!
