Tasting Notes

Using older Vernaccia wine as a base and wild foraged local Sardinian herbs including myrtle, thyme and a local variety of salvia, the vermouth is then aged in local chestnut barrels made from trees found on the island that are filled 2/3rds of the way allowing flor to develop on the surface. The vermouth is subtle in its sweetness with excellent structure, a fleshy texture and bright, vivid flavors that pop on the palate.

A sweet vermouth is almost always my aperitif of choice. On the rocks with a twist of orange, it's the perfect way to ease into an evening. These vermouths from Silvio Carta are both suberb, but I might drink the white in the summer and the red in cooler months. Since my colleague Jon has alread staff picked the white, let me extol the virtues of the red. Carta uses wine made from Vernaccia, a grape likely introduced to Sardinia by the Phoenicians. Local herbs--myrtle, thyme & salvia--are infused before aging in Chestnut barrels. Here's the twist: the barrels are only filled part way, allowing a layer of flor to develop on the surface ala fino sherry. It's dark amber in the glass with aromas of caramel, candied orange peel, dried apricots. On the palate it's rich and mildly sweet, but balanced by bright, refreshing acidity. Buon Appetito!
