Tasting Notes

A micro batch yielding only 66 liters, distilled by Master Mezcalero Tio Pedro at his tiny traditional palenque in Miahuatlan. The Espadin for this batch were harvested at an altitude of 5,100 ft, cooked using local guamuchil and encino and crushed by hand with wooden mallets before being double distilled in clay pot stills.

Since Mezcal is very much in vogue right now consumers are seeking out bottles made from exotic and hard to find agaves. Trying these different agaves can be lots of fun but let’s not forget Mezcal’s foundational agave: Espadin. Because Espadin is such a common ingredient I don’t think the general drinking public can see it used for a premium product. Well, put that thought out of your mind right now. Open this bottle for a bouquet of dry rub, charcoal smoke, and crushed mint. The palate is equally savory tasting of rich fats, sweet spices, and smoked meats. Remember that a common dish can still be the best thing you’ve ever tasted.
