Staff Pick Notes

San Martinero is an agave karwinskii: a close relative of barril, but much rarer. This is the only bottle I’ve ever seen. It’s made by the Angeles family and namely Eduardo "Lalo" Angeles, who practices very traditional clay pot distillation (he spent several years with Real Minero before branching out to bottle his own mezcal). The agave is mashed by mallet into very slow, open-air ferments in cypress vats then the distillate rests in glass balloons. It's unique, but not funky or sour in the way you might think. Cocoa powder, lavender, damp leaves, oiled leather, mountain berries, a touch of brine, and powdery clay. Full-flavored but not very smoky, with a balance of fruit and mineral demanding your attention.
