Tasting Notes

For an initial bottling, it's nice to start at the top. The first cask bottled by Holmes Cay is a 14yr rum distilled at Foursquare on Barbados in 2005. The rum aged on the island for 11yrs before being finished for 3 additional years in the U.K., all in ex-Bourbon. Bottled as a single cask with zero additives and at a natural cask strength of 64.3% abv, this is one of the most eye opening things you're likely to taste in 2020.

Although finding independent bottlings of Scotch is fairly easier to find or source throughout the US, high-quality unadulterated rum seems to be primarily embraced by the EU. Eric Kaye is hopefully the start of showcasing exceptional cask strength rums without additives so these distillates are allowed to do all the talking. For his first bottling, he chose to source two barrels from Richard Seale's Foursquare distillery in Barbados that were aged for 14 years in ex-bourbon casks. Notes of coconut husks, graham crackers, butterscotch, espresso, gingery spice, browned vanilla, tangerines and white pepper with an ever present tannic grip that is tempered through partial aging in Europe. With such a high ABV, a splash of water will peel away the complex layers that lie away in such a magnificent dram.
