Milk & Honey Apex Cognac Cask Single Malt Whisky

From Israel's first whisky distillery officially founded in 2012, the Apex series explores distinctive whiskies from some of the distiller's most exceptional casks. These unique expressions are part of the exploration to reach the full potential of whiskies at this distillery and to capture the effects of aging in Tel Aviv. This release comes from malts distilled on February 25th 2018 and aged for three years in a 400 liter French Limousin Oak Cask that previously held Cognac from a family domaine. Honey-ed and full of plum fruits, apples and pears with layers of candied ginger, vanilla and cracked pepper. A few drops of water really help this whisky blossom and open up its true potential. Very limited.
