Tasting Notes

The Yuho Brewery takes its name from the many UFO sightings reported in the region. This sake is made in the traditional, labor-intensive method known as Kimoto which renders nutty, umami flavors are typical of Kimoto sake. It pairs well with umami rich foods, including cheese. The yellow tinted color is from four years spent aging in bottle.

Miho Fujita had a strange path to being one of the few woman presidents of a sake company, having worked in marketing for Hot Wheels before she inherited Mioya Shuzo from an uncle. But far from commercializing the brewery as you might expect, Miho and her staff work closely with farm suppliers and experiment with aging and technique both new and ancestral. This is a Kimoto, made in a slow, labor intensive style of wild fermentation that has largely been forsaken in favor of high tech, higher yielding methods. Aged for 4yrs in bottle, it takes on aromas of glazed banana and orange zest, with sherry-like nuttiness, lanolin, and chamomile tea. Miho believes it tastes best after being open 1-2 months. *(Yuho is also a pun. It means "happy rice" and it's how a local would pronounce "UFO," as Ishikawa is known for having many UFO sightings!)*
