The Hombo family behind Mars Shinshu has been distilling whisky at their high-altitude distillery since 1949. The trio we're opening tonight owe their names to Kiichiro Iwai, a pioneer in Japanese whisky, for, among other things, being the first to install a Coffey still for production.
