On the level with great mezcal, rare fruit eau de vies and terroir minded spirits everywhere, this humble clairin - the traditional natural rum of Haiti - is made from fresh cane that is hand harvested, wild fermented and distilled in a small pot still.
Patrick St. Surin went against his father's wishes. He stayed in Haiti in Carrefour Des Pères, a small commune on the north side of the Island, to produce some of the finest cane spirit I have ever tasted. This Clairin is a pure expression of the Haitian landscape. Patrick planted local cane varieties like Medialande, Pete Coca, and Zariete on 10 acres of land. When he needs more, he trades with his neighbors; they give him cane and in return he lets their cows and goats graze on his pasture land. Once the cane is harvested, it is brought to the distillery by donkeys and immediately crushed. In the local method, a small amount of sugarcane syrup is mixed with the juice and is fermented naturally. The fermented juice is then double distilled in pot stills and bottled at full proof. A perfect complement to a Petit Punch.
