Looking for Sauternes? Let me guess, you're having foie gras, you're aware of this classic pairing, blah blah blah. Don't be basic. Let me up your wine pairing game. Maury is a sweet, oxidized vin doux naturel from Languedoc Rousillon, FR. "Coume du Roy" is old school French for "LIKE THE KING," which just so happens to be how I prefer to feel when I'm drinking. From 100% hand-harvested grenache, this wine is a velvety, tannic, versatile libation, evocative of figs, black fruits, and walnuts. Like port, fermentation is stopped mid-way, preserving a mellow sweetness, and fortifying the ABV up to a healthy 16.5%. Unlike port, it's neither too sweet nor too strong to compliment savory dishes. Try it with the foie, but save a bit for later. Bust out some Stilton for dessert, because Maury and blue cheese are BFFs. That's a plan, Maury.
