We all know that saké naturally pairs well with Japanese food, but sometimes you have to get weird and experiment with non-traditional pairings to find other things that work. I was quite pleased with the independent flavor profile of this beverage. It offers a rich mouthfeel, but does not cloy the palate with too much sweetness. Green grass, fresh herbs, and tart apple mingle for a nice change of pace from the anise and melons commonly found in saké. This crisp, refreshing Junmai Ginjo certainly works with raw fish and rice, but has plenty of acidity to stand up to 45-day dry-aged filet mignon, cheesy scrambled eggs, and pâté on brioche.
