Surrounded by mountains with a stretch along the Japan Sea, the prefecture absorbs extreme cold & snow, perfect for shizuko pressing. Founded in 1597 the brewery is one of the oldest active breweries in Japan.
The style known as Shizuku Sake really is one to behold, being a drip-pressed sake that focuses on pristine and silky texture with elegant flavors. The first Divine Droplets made in the Takasago igloo in Hokkaido wasn’t sustainable and it seemed like there would be no alternative until Toko stepped in and put their spin on things. The brewers of Toko Sake still embodied everything that was spectacular about the previous Divine Droplets and amped it up to 11. By separating the sake from the lees through these accordion like canvas presses and letting it drip out slowly, it creates a soft mineral driven wonder with flavors of tangerine, white pepper, pear, with kisses of raspberry and mint on the finish that leave me in pure bliss.
