Staff Pick Notes

Founded in 1818 with the marriage of Nicolas François Billecart and Elisabeth Salmon, the Billecart-Salmon it is one of the few Champagne houses to remain family-owned. The Billecart family has been living in Mareuil-sur-Ay since the 16th century. Their philosophy is that an early harvest will yield a more elegant and delicate Champagne--and so far it has been hard to prove them wrong. With an emphasis on a strong acid structure, they never harvest at higher than 10 degrees of potential alcohol. As a result, the wines are fresh and vibrant. This rosé is one of my favorites at Astor. Lovely and layered, it bursts with ripe and tart red fruits that will leave you thirsty for more. Pair with lighter white fish or sip on its own. I’m sure you’ll come up with a worthy occasion to treat yourself to the effervescent jewel.
