I very much believe that champagne is a beverage that shouldn't be relegated to New Year's Eve and special celebrations. Champagne, as a beverage, is far too versatile too be drunk once or twice a year. It can be the ideal drink pairing for anything from oysters to fried chicken. And this Brut Classique by producer Guy Charlemagne is a great place to start a foray into champagne as a drink for all occasions. It's a blend of 50% Pinot Noir, which lends boldness and structure, and 50% Chardonnay, bringing elegant, fresh fruit notes. The wine is vinified in stainless steel tanks and then matured for two years in the producer's underground cellars. This lovely sparkler has aromas of pear and citrus, an elegant mousse, and finishes with toasty notes of brioche that will leave you wanting another sip.
